Ingredients:

  • 1 cup green or brown lentils

  • 1 carrot, 1 celery stalk, 1 onion, diced

  • 2 cloves garlic, minced

  • 1 tsp cumin, olive oil, salt, pepper

  • 4 cups vegetable broth

Method:

Saute vegetables and garlic in olive oil. Add lentils, broth, and cumin. Simmer for 20–25 minutes.
