Ingredients:
- 1 cup green or brown lentils
- 1 carrot, 1 celery stalk, 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin, olive oil, salt, pepper
- 4 cups vegetable broth
Method:
Saute vegetables and garlic in olive oil. Add lentils, broth, and cumin. Simmer for 20–25 minutes.
